There are benefits to using a smooth steel to hone your blade's edge.   Over time, the edge of a knife can become misaligned, and regular honing helps bring it back into proper alignment, keeping the knife sharp. Smooth sharpening steels are excellent for quick touch-ups between more extensive sharpening sessions. A few passes on the steel can refresh the edge and improve cutting performance without the need for more aggressive sharpening methods.
